Quick Zucchini Bread
3 eggs
1 cup oil 2 1/4 cups sugar 2 cups peeled, grated zucchini, drained 1 Tbsp. vanilla 1/3 tsp. black walnut or almond flavoring 3 cups sifted flour 1 Tbsp. cinnamon 1 tsp. salt 1 tsp. soda 1 1/4 tsp. baking powder 1 cup nuts, optional
Beat eggs; continue beating and add oil, sugar, zucchini, and flavorings. Sift dry ingredients together and add to first mixture. Fold in nuts, if desired.
Grease the bottoms of 2 average bread pans or 3 small loaf pans. Line bottoms with waxed paper. Spoon batter into pans until 2/3 full. Bake at 350 degrees for 1 hour or until golden brown on top.
Cool break on rack. Delicious with butter or cheese spread. Freezes well.
