AgriMissouri™ Recipes
German Potato Salad
2 pounds cooked/sliced potatoes
1/2 cup diced celery
2 tablespoons diced onions
2 hard boiled eggs, diced
3/4 cup Hendrickson’s Salad Dressing
3 slices bacon, diced
1 tablespoon corn starch
1/4 cup water
salt & pepper to taste
pimentos (as desired)
parsley (as desired)
Dice bacon and fry until crisp. Remove bacon and set on paper towel. Keep about 1 tablespoon of bacon grease in pan. Add Hendrickson’s Salad Dressing and heat to a boil. Add in corn starch and water to bring to the consistency of a thin gravy.
Add bacon, celery, onions and eggs to potatoes in a separate dish and pour sauce over all. Garnish with parsley and pimentos and serve.
